pigeage

Etymology

French pigeage

noun

  1. The stamping down of grape skins that float to the surface during the fermentation process in winemaking.
The pigeage was still hard work, especially after lunch, but it seemed to be getting slightly easier. Later, I spent an hour or so in the office researching temperature control fermentation. 2011, Steve Hovington, The Grape Escape, page 142
